 SPICED CIDER

 

800 g apple cider

½ ea vanilla bean, lightly grilled and split in ½ lengthwise

6 ea cinnamon sticks, toasted and cracked

6 ea cloves, cracked

4 ea allspice, cracked

50 g dark brown sugar

Combine all and bring to a simmer

do not let boil.

Remove from heat and let cool at room temp. Strain through a chinois.
