MADELEINES

- 20 Eggs

- 800 gm Sugar

- 300 milk

- 500 gm Butter (melted)

- 1 lg AP Flour (sifted with

- 20m gm Baking Powder 

Whisk eggs to ribbon stage and add sugar

Add milk and butter

-Mix baking powder into flour

Fold dry into wet

 

*For pistachio and praline flavors, divide batter into two bowls of 1K 800g of batter and add 200g of praline to one bowl and 200g of pistachio to the other. Mix to incorporate.

MILK MARMALADE

- 4 Cans Coconut Milk

- 4 Cans Evaporated Milk

- 4 Cans Condensed Milk

- 4 Vanilla Beans 

-Bring vanilla beans and coconut milk to a boil

-Add the evaporated milk and boil

-Add condensed milk and constantly

stir until boiling again

- Reduce until color changesto clear Golden.

 

* For garnish, use O.B.Almonds

   - 10 gm Baking Powder

   - 290 gm Eggs

   - 120 gn Milk

   - 260 gm Sugar 

   - 60 gm Honey

   - 400 gm Melted Butter

   - 3 Lemon ( zest & Juice
