PUDDINGS
ALMOND DRY FRUITSRICE SEMOLINA TAPIOCA

 CHOCOLATE 

- 1 cup Tapioca

- 1 # ½ sweet chocolate

- 360 grs sugar  or 1can condensed milk

- 3 can coconut milk

- 3 pint milk

- 3 eggs

- 3 vanilla beans

optional : white pepper , pinch of salt , nutmeg

 COCONUT
- 200 grs tapioca ( soak in 1 pint water + 1 pint milk
- 5 cans coconut milk
- 2 Qt milk
- 1 ½ can condensed milk
- 2 pinch of salt
Soak Tapioca in water and milk for an hour
Bring 2 Qt milk to a boil then add coconut milk
Meanwhile wash tapioca over cold water and add to boiling milks .
And stir well .

Remove from flame , cover and let sit so for 20 minutes .

At last add condensed milk and salt , stir well .

Pour into container over ice and let cool totally before serving.

 

 
 TAPIOCA JELLY

 

- 1 Kg  sugar (caramel a sec)
- 1 liter good red wine (deglacage)
- 4 liter orange juice (boiled then skimmed)b
- 200 grs Tapioca pearls
Soaked in cold water for 1 hour
Then slowly cooked in clear water and  rinced
- 30 to 35 leaves of gelatin Or
- 5 to 6  ½ stick of Agar-Agar
