 1300 gm  AP Flour sifted
 2  tsp  Salt
 1 1/2 tsp  Vanilla extract
 550  gm  10 X Sugar
 900  gm  cold cubed Butter
   
   Put dry ingredients in mixing bowl with paddle and mix on low until smooth.

   Press into a half sheet tray

   Refrigerate then slice into rectangles

   Sprinkle with sugar and salt and bake at 310 F for about 10 to 15 min or until golden brown.

   FOR THE CRUMBLE

   Just spread the mix on tray ,

   Bake , 

   Let cool completely, and Blend in robot coupe

 oz  Baking Powder
 2
 oz  Baking Soda
 2  lbs  Butter
 300  gm  Sugar
 4  lbs  Sour cream
 600  gm  Buttermilk
  some options
  Add Dry currants or Raisins for Tea Scones
    

   Put in mixing bowl, AP flour, baking powder, butter, sugar and start working these ingredients with the paddle part until obtaining a sandy mix.

   Add sour cream and buttermilk and let turn slowly until homogenized.

don’t overwork it.

   Linen a large sheet pan with plastic film and spread the dough evenly:

  • Length: 19 inch.

  • Width: 13 inch

  • Height 1 ¼ inch.

Cut into squares of 2 ¾ inch sides

Cut each in half in diagonal

Yield: about 84 pieces

To bake: brush egg wash atop each triangle, sprinkle some “Granules” sugar or sugar grain and bake for about 20 minutes at 325F.

When lukewarm cut in half and individually wrap in plastic.

 6  oz  (170 gm) Sugar
 6  oz  (170 gm) Baking powder
 3  lb  Cold Butter
 3  lb  forest Ham
 2 1/4  lb  Cheese grated (Swiss, Cheddar..)
 6   slices bacon, chopped
 1  tbsp  Spice Blend
 3  quart  Buttermilk
   

   Dry ingredients in mixer - blend in mixer

   Add ham & cheese and bacon

   Add Buttermilk until mixture holds together
