 950 gr Old Fashioned Rolled Oats
 500 gr Raw Pumpkin Sedds ,hulled
 530 gr Raw Sunflower Seeds , hulled
 530 gr Shredded Coconut
 250 gr Raw Pecan , Coarsely chopped
 250 gr Sliced Almonds             
 1250 gr Pure Maple Syrup
 370 gr Extra Virgin Olive Oil
 250 gr Light Brown Sugar
 15 gr Coarsed Salt
 500 gr Golden Raisins
 500 gr Sour Cherries , dry

     Preheat convection oven to 300 degrees F

     Place oats, pumpkin seeds, sunflower seeds, coconut, pecans, syrup, olive oil, sugar, and half of the salt in a large bowl and mix until well combined.

     Spread granola mixture in an even layer on a sheet trays lined with a silpat.

     Transfer to oven and bake, stirring every 10 minutes, until granola is toasted, about 35 minutes.

     Remove granola from oven and season with the remaining salt.

     When the mix is cooled, add the golden raisins and the sour cherries. 

     This should yield 10qts of granola.

  WET
 4 cup Maple syrup
 1 cup blended oil
 2 pie Vanilla beans , split and scrapped
 1 tbsp grated Nutmeg
 1 tbsp ground Cinnamon
     Combine all ingredients , bring to a boil , remove from heat and allow to cool .
   
  DRY
 4 lbs Oats
 2 lbs Sliced Almonds
 1 lb White Sesame seeds
 0.5 oz Salt

    Combine all dry , and then mix with wet when cool .

    Spread evenly on a large sheet pan line with parchment paper , bake in a 200 degrees Foven for 4 to 5 hours 9preferably overnight) .

    When done allow to cool completely before  adding 4 cups of assorted dry fruits .

 2 cup Granola(with nuts and dried fruits)
 1 pie Apple , grated
 1 pie Pear , grated
 1.5 cup Yogurt
 2 tbsp Honey
 1 pie Orange , half zested , all segments
 0.5 cup Orange juice

      Put granola in a bowl with all the ingredients , cover and refrigerate for 1/2 hour .

     Yield : 4 portions
